Deborah and Paul Old, Project 108, Cabirou, Languedoc, France commonwood Producer - Tony Bornard andPaul Old is an ex dancer who fell in love with Corbieres, particularly the potential of old vine Carignan, retrained as a winemaker when his body "began to fall apart" and started Les Clos Perdus back in 2003. Project 108 is Paul's 'zero zero' side project. The Cabirou is 90% Muscat and 10% Grenache Gris from the same plot of north facing slopes high in the hills of Corbieres where the grapes are hand harvested in the early hour. Half of the grapes
